Hi it’s Ming Ming here 🙂
Udon noodle is one of my favorite Asian food! I tasted it by accident when it was cooked by one of my friends when I was at university. Actually I always love this dish especially when I’m tired, or have little appetite, but still want something nutritious. Personally, I like the fresh taste of the ingredients
Today, I strongly recommend you to try to make it at home and enjoy it.
And , here’s the Udon Noodle Recipe.
3 tomatoes
1 package of udon noodle
Some mixed mushrooms
Some frozen shrimps
Peanut oil
Soy sauce
A Wok Pan
Before cooking, some preparations are required.
1. Cut the tomatoes into half ,take the stems of them as the illustration shows. Then, let the mincer take care of chopping . The finer the tomatoes are chopped, the more likely to taste like ketchup.
2. If you got the frozen mushrooms from a supermarket as I do, defrosting them beforehand is needed, and importantly, squeeze out the water from them so that they can absorb the tomatoes flavor as much as they can.
3. To make it Vegetarian-friendly,just remove the shrimps!
And now, here we go !
1.Stir fry the mushrooms : heat up the wok, put the mushrooms and a small spoon of peanut oil, and stir fry them (around 1 and a half mins).
2. Add the udon noodle : put the udon noodle in , when the mushroom start to be soft. personally, I advice you to separate the udon before put it into the wok, rather than as a whole in order to shorten the cooking time and save energy(around 5 mins).
3. Add the minced tomatoes and turn down the stove a little : put them in and keep stir frying, also a little water if it’s too dry. Let the mushroom absorb the tomatoes’ flavor and dye the noodle with natural ingredients (around 2 mins)
4.Add the shrimps and turn up the stove to previous level : shrimps can be put now, since they are easily cook, and repeat stir frying.
5. Turn off the stove when shrimps are cook, and add some soy bean sauce and drizzle olive oil over it.
