1 1/2 tbsp peanut oil
2 garlic cloves, crushed and finely chopped
4 mushrooms
150 g (5 1/2 oz) firm tofu
1 1/2 teaspoons cornstarch
2 tbsp chicken stock
50 g (1/3 cup) raw peanuts
Start by putting the soy sauce, rice wine and oyster sauce together in a bowl and stir it well to combine. Set it aside for a moment.
Now take the pork fillet and slice it into pieces that are about 5 mm (1/4 inch) thick. Put the wok at medium heat and pour half the peanut oil on it. Then add the pork and stir fry it for about 2 minutes until it is a little bit brown golden but not cooked all the way through( we want to cook it more later). Put it into a bowl and set aside.
Heat the remaining oil on the wok, add some garlic and mushrooms together and stir-fry them for about 2 minutes. Add the tofu and cook for another 2 minutes until the tofu is cooked through and feels more soft. Then add the soy sauce mixture and pork to the wok and toss together to combine well.
Get a bowl and combine the cornflour and stock together with a little bit of warm water. Stir until they are combined well and add to the wok. Toss it together well.
Now add some peanuts and leave the dish on the wok for about 1 minute or until the pork is cooked through. Now transfer it to a large bowl and enjoy your Stir-fried pork with peanuts and tofu!
